Straight from the pouch

Why freeze-dry instead of just dry?
Ordinary dried fruit is cooked down with heat, usually with sugar added to make up for what the process strips away. Freeze-drying does the opposite: fruit is frozen solid, then placed under vacuum so the ice turns straight to vapour without ever passing through a liquid state.
Nothing shrinks, nothing caramelises, and there's nowhere for added sugar to hide, because there's no cooking step that needs it. What's left is around 98% of the fruit's original nutrients, in a form light enough to float and stable enough to sit in your pantry for well over a year.
